Finding a really great pizza is by it's nature a VERY subjective experience. Fresh ingredients should be a given. For me a high protein flour is a must. Knowing how to properly proof the dough is just as important. Having an oven that actually gets to the temp required to achieve the right balance of crisp and chew without going completely cracker crust is well... you know. A chef that will brush the crust with a bit of EVOO? HEAVEN! Take the drive to Joco. I promise it's worth it.
